Default 72 Harley Davidson Differential

I recently bought a 72 Harley Davidson 4 wheel Gold Carta as a project for my son and I to fix up. It runs just fine, and Ive replaced motor and brakes.

Do I need to replace the differential fluid or can I just top it off?
It looks like I need to remove the cover/plate in order to do this? is that true?
If i remove the cover will I need a new gasket to put back on?
What type of oil do i use since the recommended is no longer available?
