I think the BMS needs to know Ah because that's how it factors SOC. So as the battery loses capacity, it knows in what state of charge the cells should be...when to expect a "low voltage cutoff" for example. At least that's what I think.

Well, that's not how the ZEVA BMS works. You set the LV for what an individual cells voltage needs to discharge down to and the BMS (when set up properly) will terminate the packs power. (You don't move any more! )
