As I described - I am interested in the technology. - so what is your recommendation for 72 volt 600 amp demand - if I were to convert to lithium?

That depends on what kind of run time you need. We could throw a bunch of 40Ah's in parallel with all the extra space to meet the 600Amp requirement, but if you only need that for a short interval, then we'd do better to put in 200Ah 3V cells with a BMS...

I am also interested in the tech. I have a 07 EZGO ST 2+2. It gets used as a beach town cart and back home for visiting neighbors in a community with sizable hills. Then pulling a small trailer for yard work. Upgraded 5 yrs ago and made it 48 volt faster motor with ability to have a low range, alltrax controller. 23-25 on flat surface. would love to get a few more MPH. Anyway any help appreciated.

Amp hours will only govern run time. For a trouble free lithium installation, get a 72v (or 48v) battery, not multiple 12v batteries, with enough current supply capability to match your motor/controller/cart.
