The Zeva BMS will allow you to configure the individual cell voltages for lower, upper and balancing as you mentioned.
At the very least you should consider using one of these programmable voltmeters that can automatically control the charge voltage, the pack low voltage and pack high voltage (Regen) disconnect using external relays.
While it cannot provide single cell protection is much better than manually handling disconnects.
