Default EV Bellytank Racer

I am in the process of planning a Bellytank build. For those who don't know what a bellytank is, it is a car typically built for running speed trials on the Bonneville Salt Flats. They are a very simple vehicle that utilizes a drop tank from a World War 2 fighter as the body shell. I want to use this Bellytank to bop around car shows and short cruses on the street, so it's going to run head and tail lights. I would like to build my Bellytank around an electric driveline and I am wondering if it possible to do it with electric golf cart components.

The total weight of the vehicle will be around 1000 pounds with me in it. Rear end gear ratio will be 3.78:1 with 30" - 31" tires. With that gear ratio and that tire size, I figure I need to turn 1361 rpm to 2700 rpm to get into the 30 - 60 mph range for speed. Is this possible with an electric golf cart motor and a 48 - 72 volt system? Can I do it without adapting a transmission into the driveline? I would like to couple the electric motor directly to the rear end. The tank I have is relatively short and I am 6'-2", so I'm trying to keep the driveline as compact as possible.

Any help or advice would be greatly appreciated.
