Battery Cables
When replacing the battery cables should stainless steel nuts be used if they also need to be replaced?

That's what I used when I replaced my cables 2 years ago and the stainless nuts still look brand new. I do prop my seat open when charging the batteries for better ventilation.

I used the stainless / nylon lock nuts and haven't had a lose cable ever . knock on wood !

Typically is best not to use fasteners that grab and apply force only to the battery stud as you turn them since it can loosen the stud.
